I did an interview on Wisconsin Public Radio with Mike Gingrich of Uplands Cheese, makers of Pleasant Ridge Reserve. It had just won best of show at the ACS its first time in competition. It was a heady time. The world was ours for the taking. We joked about moving to Europe to sell raw milk cheese if the feds tried to take what little we could sneak in under 60 days of maturity.
